What Is the Big Deal About Vidalia Onions?
One of the things most people hate about peeling and preparing fresh onions, is that the odors from the onion tend to make your eyes water. Seriously, we’ve even seen people chopping onions who insist on wearing goggles (not that we could blame them for it). Typical yellow onions can be pungent, and leave your house smelling well… onion-y. But compared to their yellow onion cousins, Vidalia onions are a class act.
The production of Vidalia onions started in Vidalia City, in Georgia in the early 1930’s. The soil in Georgia was sandy and not particularly nutrient dense; farmers stuck to crops like corn and cotton, but they were not very profitable for them. They started growing a unique strain of yellow onion that had none of the pungent properties of traditional yellow onions. People loved them in soups, salads, gravies and of course sautéed, because they had a unique sweet flavor, with all the health benefits and nutrients that standard onions offered.
Georgia and the Vidalia City became so nationally and then internationally recognized for the sweet onion, that it became known as a Vidalia onion. Want to know something interesting? If you took the seeds of a Vidalia onion and planted them in New York, they would not taste the same. There is something about the sandy soil in Georgia that produces the exceptional quality that consumers and restaurants demand. Nothing is as sweet as home, for the humble onion, and the sandy soil allows naturally occurring sulphurs to sink to the clay level of agricultural fields. It’s the sulphur that makes onions taste a little ‘hot’ with a strong and unpleasant scent.

Vidalia onions are protected by law for the strain of plants that provide them. True story! In 1986 the Vidalia Onion Act was passed in Georgia, that limits the production of these onions exclusively to Georgia under trademark. The Vidalia onions only grow through the winter season, where added moisture ensures that every onion bulb receives additional moisture, that adds to the juicy sweet texture of the vegetable.

What we loved about this recipe featured on The Food Network, is the combination of the caramelized onions, red pepper mayo and homemade jalapeno relish. The relish is created with pickled (not too hot) jalapeno slices that are sautéed in brown sugar.
